1 oz margarine, melted
1/4 tsp cinnamon, ground

1/2 tsp cinnamon, ground

1 tsp cinnamon, ground

4 gal 2 cup potato, sweet, syrup, canned

2 tsp cinnamon, ground
Instructions
Wash hands before beginning to prepare & sanitize surfaces and equipment.
Arrange potatoes in 12x20x2 pan(s) and include 1/2 of canned syrup.
Mix sugar, margarine, and cinnamon in other 1/2 of syrup heat to boiling point.
Pour over potatoes. Bake immediately.
*CCP--Maintain>140F. Temperature should be taken every 2 hours during holding.
CCP -- Cool: Product must reach 140F/60C to 70F/21C within 2 hrs and 70F/21C to 40F/4C
within 4 hrs.
CCP- Reheat: To internal temperature of 165F held for at least 15 seconds.
NOTES: 8 lbs fresh = 3 Qts can Sweet potatoes.
