  • 1/3 cup Caesar Dressing

  • 5 each Whole Wheat Tortilla 12 in

  • 2 & 1/3 cup Romaine Lettuce, fresh

  • 10 oz Mozzarella Cheese, Shredded

  • 5.5 oz Roasted Red Peppers, Bias Cut

  • 1/3 cup Caesar Dressing

  • 3/4 cup Caesar Dressing

  • 12.5 each Whole Wheat Tortilla 12 in

  • 1 & 1/2 quart Romaine Lettuce, fresh

  • 13 oz Roasted Red Peppers, Bias Cut

  • 1 & 1/2 cup Caesar Dressing

  • 3 & 1/4 cup Caesar Dressing

  • 50 each Whole Wheat Tortilla 12 in

  • 1 Gal, 3 cup Romaine Lettuce, fresh

  • 6lb 4oz Mozzarella Cheese, Shredded

  • 3lb 4 oz Roasted Red Peppers, Bias Cut


Instructions

  1. Wash hands before beginning preparation /& sanitize surfaces & equipment.

  2. Slice Chicken on bias.

  3. CCP- Maintain <40F; discard unused product.

  4. Toss grilled chicken in with 1st portion of caesar dressing; set aside.

  5. CCP- Maintain <40F; discard unused product.

  6. Spread 1 Tbsp of 2nd portion of caesar dressing on each tortills, leaving a 2 in border around edge of tortilla.

  7. Cover each tortilla with 1/2 cup of lettuce, 2oz of cheese and 2 oz of roasted red pepper. Place 3 oz of grilled chicken on top and roll tightly. Tuck both ends and cut down the middle on a bias.

  8. Repeat with remaining ingredients. 1 serving equal 1/2 of wrap.
