  • 3 tsp Baking Powder

  • 4.5 Oz Flour, All Purpose

  • 1 lb 6 Oz Flour, All Purpose

  • 1 1/2 tsp Salt, Iodized

  • 4 lb 10 Oz Cottage Cheese, 1% Fat

  • 12.04 each Egg, Shell Large

  • 7.5 Oz Margarine, Solids

  • 11 lb 9 Oz Onion, Yellow Diced

  • 3 3/4 Cup Cream, Whipping Heavy


Instructions

  1. WASH HANDS before beginning preparation. SANITIZE surfaces & equipment.

  2. Preheat oven 350F.

  3. Mix aII the ingredients for the cheese buttons together in a large bowl.

  4. Place #40 scoop (purple) of the cheese button mixture on a greased baking sheet, 24 per sheet pan.

  5. Bake at 350 degrees for 10 minutes.

  6. While buttons are cooking, prepare sauteed onions. Place 1 pound of butter in braising pan over medium/high heat.

  7. Add onions once butter is melted and let saute until translucent. About 10-15 minutes. Remove from stove and set aside.

  8. Once cheese buttons are baked, remove from baking sheet and place 90 cheese buttons in a lined 2" hotel pan.

  9. Top each pan with 3 cups of sauteed onions and 2 quarts of cream. Do not be stingy with the cream.

  10. Place in 350 degree oven and bake for 30 minutes
