Instructions
WASH HANDS before beginning preparation & SANITIZE surfaces & equipment.
Combine base with water to make a broth.
Set aside.
Heat oil in a pot over medium heat. Add onion, celery, and parsnip. Cook until tender, 6-8 minutes.
Add the broth and next 5 ingredients and bring to a boil. Reduce heat to medium low, then partially cover pot and cook for 25-35 minutes until lentils are tender. Stir occasionally. Add additional stock or water if necessary to prevent the lentils from burning or clumping.
Once lentils are tender, remove bay leaves, then stir in salt and nutmeg.
Serve: Ladle serving in to a bowl. Sprinkle with fresh parsley if desired for presentation.
