  • 20 Slice Bread White

  • 3 1/4 C Eggs, Liquid, Thawed

  • 2 1/3 C Milk, 2% Bulk

  • 1 1/4 tsp Cinnamon, Ground

  • 8 Oz Cream Cheese, Bulk

  • 1/3 C Sugar Granulated, Bulk

  • 50 Slice Bread White

  • 2 Qt Eggs, Liquid, Thawed

  • 1 1/2 Qt Milk, 2% Bulk

  • 1 TBSP Cinnamon, Ground

  • 1 Lb 4 Oz Cream Cheese, Bulk

  • 1 C Sugar Granulated, Bulk

  • 8 Lb Blueberries, Fresh

  • 200 Slice Bread White

  • 2 Gal Eggs, Liquid, Thawed

  • 1 Gal 3 C Milk, 2% Bulk

  • 1/4 C Cinnamon, Ground

  • 5 Lb Cream Cheese, Bulk

  • 1 Qt Sugar Granulated, Bulk


Instructions

  1. WASH HANDS before beginning preparation & SANITIZE surfaces & equipment.

  2. May use frozen Blueberries

  3. Combine Cinnamon, Milk, and Eggs in a medium bowl or Bain Marie. Blend well with whip. CCP - Maintain <40F/4C.

  4. Combine Cream Cheese, Blueberries, & Sugar in a mixer. Blend on medium speed for 2 minutes, then beat 1 minute on high.

  5. Spread 2z of Cream Cheese Mixture on one slice of bread. Cover Cream Cheese with another slice of Bread.

  6. Dip stuffed Bread into Egg mixture to soak for 10 sec. Grill on a well-greased griddle Cook for about 4 minutes checking to make sure Bread browns evenly.

  7. Flip Bread & allow other side to cook for 4 minutes checking to make sure Bread browns evenly. Then flip back to the other side for 2 minutes then back to the other side for 2 minutes. Check internal temperature of bread not filling. CCP-*Cook to an internal temperature of 165F/74C held for at least 15 seconds.

  8. Serve on well heated plate with the appropriate Garnish. (Blueberries & Whip Cream)

  9. CCP -- Maintain: Product held at >135F/57C Temperature should be taken every 2 hours during holding. *Maintaining at the proper temperature will present no food safety issue; long hot holding times can affect food quality.
