  • 2 lb 3 Oz Fish, Catfish

  • 1/2 Cup Margarine, Solids

  • 2 Tbsp Seasoning Mix Cajun Hmd

  • 5 lb 8 Oz Fish, Catfish

  • 1 1/8 Cup Margarine, Solids

50 Servings

  • 1/4 Cup Seasoning Mix Cajun Hmd

  • 11 lb Fish, Catfish

  • 2 1/4 Cup Margarine, Solids

100 Servings

  • 1/2 Cup Seasoning Mix Cajun Hmd

  • 22 lb Fish, Catfish

  • 1 1/8 Qt Margarine, Solids


Instructions

  1. WASH HANDS before beginning preparation & SANITIZE surfaces & equipment.

  2. Rinse Fish and dry well. Sprinkle Cajun seasoning on Fillets.

  3. Melt Margarine.

  4. Sprinkle Fillets with Spice and melted Margarine.

  5. Bake at 325F for 10-15 min until *internal temp 155F for 15 sec. *Maintain >135F./57C

  6. CCP -- Maintain >135F/57C for only 4 hrs.

  7. CCP -- Cool: Product must reach 140F to 70F within 2 hrs and 70F to 40F within 4 hrs.

  8. CCP -- Reheat: To internal temp of 165F held 15 sec within 1 hr - one time only.
