  • 1 1/4 C Tomato, Fresh, Diced 

  • 1/2 C Onion, Yellow, Diced

  • 1 TBSP 1 tsp Juice, Lemon RTS 

  • 1 1/8 tsp Salt, Iodized

  • 6.25 each Avocado, Fresh Peeled, Seeded & Cubed

  • 2 1/2 C Tomato, Fresh, Diced 

  • 1 C Onion, Yellow, Diced

  • 2 TBSP 2 tsp Juice, Lemon RTS 

  • 2 1/8 tsp Salt, Iodized 

100 Servings

  • 12.5 each Avocado, Fresh Peeled, Seeded & Cubed

  • 1 1/4 Qt Tomato, Fresh, Diced 

  • 1 C Onion, Yellow, Diced

  • 2 TBSP 2 tsp Juice, Lemon RTS 

  • 2 1/8 tsp Salt, Iodized 


Instructions

  1. WASH HANDS before beginning preparation & SANITIZE surfaces & equipment.

  2. Coarsely chop Avocado and mash slightly.

  3. Add remaining Ingredients to Avocado and mix well. Place in suitable covered container in refrigerator to chill.

  4. Portion: Serve #60 scoop.

  5. CCP -- Maintain <40F/4C; discard unused product.
