Instructions
WASH HANDS before beginning preparation & SANITIZE surfaces & equipment.
Place ham fat-side up on a rack in roasting pan(s). Do not cover. Add water.
Bake to* internal temp >155F/68C held for 15 sec.
Remove ham from oven about 30 min before it is done. Drain off drippings.
Score ham 1/4 inch deep in diamond pattern. Return to oven and heat to *internal temp >160F/71C for 15 sec.
CCP -- Maintain >135F/57C for only 4 hrs.
CCP -- Cool: Product must reach 140F/60C to 70F/21C within 2 hrs and 70F/21C to 40F/4C within 4 hrs.
CCP -- Reheat: To internal temp of 165F/74C held 15 sec within 1 hr - one time only.
