  • 1 1/3 C Water, Tap    

50 Servings

  • 9 lb 6 oz Ham, Pit-Style Smoked 

  • 2 3/4 C Water, Tap    

100 Servings

  • 18 lb 12 oz Ham, Pit-Style Smoked 

  • 1 1/2 C Water, Tap   


Instructions

  1. WASH HANDS before beginning preparation & SANITIZE surfaces & equipment.

  2. Place ham fat-side up on a rack in roasting pan(s). Do not cover. Add water.

  3. Bake to* internal temp >155F/68C held for 15 sec.

  4. Remove ham from oven about 30 min before it is done. Drain off drippings.

  5. Score ham 1/4 inch deep in diamond pattern. Return to oven and heat to *internal temp >160F/71C for 15 sec.

  6. CCP -- Maintain >135F/57C for only 4 hrs.

  7. CCP -- Cool: Product must reach 140F/60C to 70F/21C within 2 hrs and 70F/21C to 40F/4C within 4 hrs.

  8. CCP -- Reheat: To internal temp of 165F/74C held 15 sec within 1 hr - one time only.
