  • 1 lb 4 oz cucumber, fresh, shredded

  • 1 1/2 tsp salt

  • 2 1/4 QT yogurt, plain, lowfat

  • 2 tsp garlic, whole, fresh, minced

  • 2 Tbsp 2 tsp mint, fresh, minced

  • 2 Tbsp green onion/scallion, sliced thin

  • 1 1/2 tsp black pepper, ground


Instructions

  1. Wash hands before beginning to prepare & sanitize surfaces and equipment.

  2. Combine shredded cucumber and salt and let sit for 10-15 min. Drain well.

  3. Combine all remaining ingredients with cucumber and refrigerate until use.
