  • 2/3 cup ranch dressing

  • 3 1/8 cup ranch dressing

  • 1 gal, 4 cup Southwestern turkey, prepared

  • 1 1/2 quart ranch dressing

  • 2 lb 6 oz tomato, fresh, chopped

  • 1 lb 8 oz cheddar cheese, shredded

  • 2 lb 8 oz lettuce, shredded

  • 100 each flour tortilla, 10 in


Instructions

  1. Wash hands before beginning to prepare & sanitize surfaces and equipment.

  2. Prepare Southwestern turkey per separate recipe and cool per recipe instructions. Refrigerate until needed.

  3. Assemble wrap: On each tortilla spread 1 Tbsp of ranch dressing and layer 1/4 cup prepared turkey mixture, 1 Tbsp cheese, 1/4 cup lettuce and 1 Tbsp tomato. Fold bottom 2 inches of tortilla upward, Fold right & left sides of tortilla over contents tightly. Place tortilla in pan with seam facing down in pan.

  4. CCP- Maintain <40F; discard unused product.
